Skinny Shrimp & Zucchini Noodles

I walked into whole foods to get one thing and OF COURSE I ended up spending $100. Zucchini noodles were on the shelf right when I walked in, and  I was just like okay its my turn to try this. I ended up making dinner for all of my roommates. Easy, yummy & everyones happy (:

Prep: 15 mins

Cook: 10 mins

2 to 4 servings

The Recipe

2 tablespoons oil

1 pound shrimp

¼ cup white wine

Red pepper flakes

1 tablespoon mince garlic ( or as much to your liking)((I like a lot))

2 tablespoons lemon juice… I put more here too

Parsley for garnish

**I added lime, ginger, lemon, agave juice to make it even better**

Directions

Saucepan over medium-low heat.

Heat olive oil for 1 minute.

Add the garlic and crushed red pepper flakes.

Cook for 1 minute.

Don’t forget to stir.

Add shrimp and cook,

stirring as needed,

until pink on all sides,

About 3 minutes.

Season the shrimp and

 move them to a dry space.

Increase the heat to medium.

Add the white wine and lemon juice to the pan.

Using a wooden spoon scrape the pan while cooking the wine and lemon juice

2 minutes.

Add the zucchini noodles and cook,

stirring occasionally,

2 minutes.

Return the shrimp to the pan

Toss to combine.

Season with salt and pepper,

garnish with parsley

or whatever else you may want
